A paste with high content of pasteurized egg yolks, with best solubility even when cold processed. Ideal both to prepare typical custard-flavored gelato (grating some lemon rind), and prepare or integrate yellow base mixes.

  • To have a custard-flavored gelato: 60 – 80 g of product per liter of white or yellow base mix.
  • For yellow base mix for other flavors: 30 – 40 g of product per
    liter of base mix.
  • For semifreddi: 70-120 g/L to be trickled in the whipped semifreddo.
